    I feel like this kind of thing is the result of not having much of a background in cooking for yourself in general. Fortunately, there are tons of videos and online resources to get better at cooking. Don’t just limit yourself to just vegan guides. Look at other cooking materials and then learn effective substitutes from vegan sources.

      Or… turn it into a specialty dish like “French Tacos”…

        this sounds particularly unpalatable but theres a chinese mexican fusion place here. you can have tacos or burritos with all sorts of different stuff. leftover chinese food gets rolled into a tortilla now but its not to the extremes of whatever that is
