It’s partially because she doesn’t feel that she has the right to tell people how to live their lives. She’s a vegetarian mostly for environmental reasons, rather than for animal rights.
She’s also conflict averse, and the “individual choice” philosophy does tend to de-escalate conversations with meat eaters, who are often hostile to vegetarians.

I was visiting the head office of a California-based company that I worked for, and my colleagues (mostly left-leaning) were moaning about a proposal to make it illegal to hit children. After 15 minutes I couldn’t keep my mouth shut and said, “I think a society should protect those least able to protect themselves.” There was a lot of backpedaling, but also a few people explaining how it was totally necessary that they hit their children for reasons.
I didn’t have children at the time, but my step-daughter (now 20) and son (now 17) were never punished with violence, so it is possible for sure.

I would not recommend engaging with law enforcement in the USA.
If they ask you a question, you are on very risky ground. Not answering can be considered interfering with an investigation. Answering and getting it wrong, even accidentally, can get you convicted of lying to the police.
Or cops could just be having a bad day and decide to execute you for no reason.
